Rice Stuffed Avocados

Avocados were considered as an aphrodisiac by the Aztecs and cherish them very much.
Avocados are so versatile even though they are fruits they are mostly, eaten as an appetizer or in salads.  But you can prepare them in many other different ways.  The avocados are great to stuff.  You can fill them with a sweet filling or a salty one.
Serve 6

Ingredients

1 1/2 cup cooked Basmati rice.
1 small can of sliced mushrooms(drained and rinsed)
1 cup chopped tomato
1/2 cup chopped celery rib
2 scallions trimmed and minced
3 ripe avocados cut in half (pit removed)and diced
2 Tbsp. minced parsley or cilantro
1 1/2 Tbsp. lemon juice
1 1/2 Tbsp. olive oil
Salt & pepper to taste (for a low sodium dish use a non- salt seasoning).
1/3 cup pitted Kalamata olives  or green olives pitted
Directions:

Spoon out the avocado flesh (living the skin for filling) and dice.   Mix well and fill each half avocado with some of the filling.
Decorate with some parsley or cilantro and serve.
